Vegan Beetroot Risotto

Beet Risotto

What is your relationship with this earthy veg? Do you love it or do you hate it?

I am definitely  a fan and literally can eat beets in any form! Beetroot are high nutritional, an excellent source of folic acid, manganese, potassium and vitamins from the B group. This super veg protect us from heart diseases, helps liver functions and busts immune system so it’s definitely worth give them a chance!


200g Arborio Risotto Rice

1-2 raw beetroots

1 red onion

1 glove of garlic

50ml of while wine (optional)

1 L Vegetables stock

Salt and pepper

2 TBS Nutritioanl Yeast


To Serve:

Rocket salad or Parsley (optional)



Start with pealing and grating your beets. I like them coarsely grated so they don’t all apart in the process of cooking and there is a bit of a bite in the end. I recommend using gloves to protect your hand. Set aside.

Chop an onion and add to a pan with a splash of oil. Gently fry for couple of minutes, add minced garlic and dry rice to the pan. Stir for a minute or so until the rice absorbs all the moisture. Now is the times to add the wine if you are using it. Let it simmer for a minute or so and let the alcohol evaporate.

Add your grated beetroot and a good splash of vegetable stock. You want the rice just to be covered. Stir the rice gently from times to time and watch the stock being absorbed by the rice. Keep on adding more sock bit by bit while string. This process makes the risotto creamy and delicate as the starches are released from the rice. I recommend trying the rice along the way for flavor and to judge if it’s cooked. I did not have to add salt to my dish as my veg broth was very flavorsome but if you are adding this is the time to do it, toward the end of cooking process. Add pepper and nutritional yeast* and give it a final splash of stock and stir.

Serve immediately with rocket salad, parsley or any other topping you fancy!

*Nutritional yeast are deactivated yeast that come in form of yellow flakes and cheese like taste. They can be purchased in most supermarkets, health stores or ordered from Amazon. 1kg bag will last you for a longer while as you only need 1-2 spoons to get very strong cheesy flavor.

If you consume diary you can use Parmesan cheese instead.
