Carrot and apple slaw

This is one of my favourite side dishes or a light lunch option.  Really easy and quick to make, light and super delicious.

Not only colourful and visually pleasing but also very healthy! Vitamin A in carrots helps our vision, sweetness of apple provides vitamin C and B and sharp walnuts are high in antioxidants and full of heart-healthy fats.

Ingredients:

2 Carrots

1 Apple

Handful of walnuts

Handful of parsley

Tbsp Olive oil

1/2 Lemon

Tsp of honey

Pepper

Method:

Grate carrots and apple. I like this slaw to be crunchy so I use coarse side of the grater. Add chopped parsley and chopped walnuts. In a small jar mix tea spoon of honey, juice of half a lemon, table soon of olive oil and pepper. Mix well and add to the slaw. Mix well and enjoy!
